GREEN AND RED PEPPERS WITH CRAB MEAT

Ingredients

  • 3 green peppers
  • 3 red peppers
  • 1 cup light cream
  • 4 tsp butter
  • ¼ tsp ground nutmeg
  • 2 tbsp cornstarch
  • ¼ cup dry white wine
  • 1 tsp lemon juice
  • 1 tsp salt
  • 2 cups crab meat, cooked
  • 1 cup rice, cooked
  • Paprika (optional)
  • 1 tsp salt
  • White pepper to taste

Directions

  • Preheat oven to 350° F.
  • Cut tops off peppers, remove seeds.
  • Steam peppers 2–4 minutes, drain.
  • Heat cream and butter.
  • Add nutmeg.
  • Mix cornstarch, wine, lemon juice and salt.
  • Add to cream.
  • Cook until thickened, stirring constantly.
  • Combine with crab meat and rice.
  • Spoon into peppers.
  • Sprinkle with paprika and salt.
  • Bake in a greased baking dish in a moderate oven (350° F) for 20 minutes.
