Grilled Bacon, Cheddar and Tomato Sandwich
6 slices thick-cut bacon
2 tablespoons mayonnaise
4 slices country-style sourdough bread (5 x 3 x 1/2)
1 cup grated sharp cheddar cheese
4 slices tomatoes, seeded
Salt and pepper
1. Cook bacon until crisp, turning often; drain.
2. Press ¼ cup grated cheese on 2 slices of bread and top with tomato; sprinkle with salt and pepper. Lay
bacon slices on top then another ¼ cup cheese, pressed onto bacon, then put piece of bread on top.
3. Spread top outside slice of bread with ½ tablespoon mayonnaise. Put in a skillet on just below medium
heat, mayonnaise side down, with a plate on top to weight it down. Cook until golden brown (about 2
minutes). Spread ½ tablespoon mayonnaise on top slice of bread, turn over and put plate on top. Cook
about 2 minutes. Make certain both sides are a deep golden brown for crispiness.
