GRILLED CORN WITH MINT BUTTER

Ingredients

  • 2 tablespoons butter, melted
  • 1 tablespoon finely chopped mint
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon finely chopped cilantro
  • 1/4 teaspoon salt
  • 8 ears corn

Directions

  • Prepare grill. Coat grill rack with nonstick cooking spray. Combine butter, mint, lemon juice, pepper, cilantro and salt; stir well.
  • Place corn on prepared grill rackfor 10 minutes or until done, turning frequently. Place corn on platter and brush with butter mixture
