Grilled Herb Grit Cakes
Why I Love This Recipe
*Prepare grits a day ahead of time and refrigerate.*
Ingredients You'll Need
2 1/4 c. water
1 tbsp. butter
1/2 tsp. salt (kosher)
2 garlic cloves, minced
3/4 c. uncooked coarse ground yellow grits
1 tsp. chopped fresh basil
1 tsp. chopped fresh thyme
1 tsp. chopped fresh parsley
8 tsp. parmesan cheese
1)Coimbine water, butter, salt, and garlic in a medium saucepan and bring to a boil. Gradually add grits, stirring constantly.
2)Reduce heat, and simmer for 10 minutes or until thick-stir occasionally.
3)Stir in basil, thyme, and parsley.
4)Pour grits into an 8 inch square baking dish.
5)Press plastic warp onto surface of grits and chill 2 hours (they should be firm)
7)Cut grits into 8 portions.
8)Grill grit cakes for 6 minutes. Carefully turn each cake over and sprinkle each cake with cheese. Grill 6 minutes or until lightly browned and heated through.
