- 1/2 cup lemon juice
- 1/4 cup garlic olive oil
- 3 tbsp chopped onion
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp thyme
- 1 tsp minced garlic
- 3 to 4 pounds chicken pieces
- In a large ziplock baggie, combine lemon juice, oil, onion, salt, pepper, thyme and garlic; mix well. Remove 1/4 of mixture for basting and store in refrigerator. Add chicken pieces to the bag; seal and turn to coat. Refrigerate overnight.
- When ready to grill, drain and discard marinade from chicken. Grill over medium heat, covered, for 20 minutes.
- Baste with reserved marinade heated with 2 tbsp butter added. Continue grilling until juices run clear, about 20 to 30 minutes, basting and turning several times. Makes 4 servings.
