Grilled Red Snapper with Grapefruit-Thyme Mojo

 


INGREDIENTS

  • Cooking Time: 10 minutes
  • Servings: 4
  • Preparation Time: 10 minutes
  • 1/4 cup olive oil
  • 8 cloves roasted garlic
  • flesh and zest from 1 grapefruit
  • 1/4 cup orange juice
  • 1 t honey
  • 2 serrano chiles
  • 1 T fresh thyme
  • 1/4 t kosher salt
  • 4 - 8 oz skinless red snapper fillets

DIRECTIONS

Puree olive oil, roasted garlic, grapefruit flesh and zest, orange juice, honey, serrano chiles, thyme and salt. Oil, season and grill red snapper. Serve drizzled with grapefruit sauce.
