GRILLED RED SNAPPER WITH GRAPEFRUIT-THYME MOJO

Ingredients

  • 1/4 cup olive oil
  • 8 cloves roasted garlic
  • flesh and zest from 1 grapefruit
  • 1/4 cup orange juice
  • 1 t honey
  • 2 serrano chiles
  • 1 T fresh thyme
  • 1/4 t kosher salt
  • 4 - 8 oz skinless red snapper fillets

Directions

  • Puree olive oil, roasted garlic, grapefruit flesh and zest, orange juice, honey, serrano chiles, thyme and salt. Oil, season and grill red snapper. Serve drizzled with grapefruit sauce.
