I am not a fan of fish, but I am trying

really hard to incorporate into our dinners at least

once a week. So, here is what I made last night and

we all really enjoyed it:)


  • Marinade
  • ½ cup olive oil
  • ¼ cup lemon juice
  • 4 scallions, chopped, including tops
  • Salsa
  • 1 small fresh pineapple, cut into small cubes
  • 1 small red onion, diced
  • 1 medium yellow or orange pepper, cored, seeded and
  • diced
  • 1 medium red pepper, cored, seeded and diced
  • ½ teaspoon finely minced jalapeno pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons lime juice
  • 1 clove garlic, minced


  • Combine the oil, lemon juice, and scallions. Pour
  • over the tuna steaks in a flat pan and marinate for
  • several hours before grilling tuna. Meanwhile,
  • prepare pineapple salsa by combining all the salsa
  • ingredients. Set aside. When ready to cook, place
  • the tuna steaks directly on a hot oiled grill. Cook
  • for 3-4 minutes on each side, turning once. Do not
  • overcook. Serve with salsa on top or passed in a
  • bowl.
