Grilled Veggie Fish Sauce

This is a lovely grilled veggie sauce perfect for fish. I first came up with it last summer as a topping for some grilled tuna we had. Something nice to do with our veggies we grew in our own garden.

INGREDIENTS

  • Cooking Time: 10 minutes
  • Servings: 10+
  • Preparation Time: 30 minutes
  • 4 whole tomatoes (6-8 if they are Roma)
  • 2 Red and Green Peppers
  • Olive Oil
  • Garlic
  • Green Beans (or Blue Lake Beans)
  • Basil
  • Parsely
  • Lemon Juice

DIRECTIONS

Slice Tomatoes and Peppers and Put on the grill (over tin foil works)


Remove when cooked enough to be soft


(You'll want to remove the skin from the peppers)


Blanch Beans in hot water for 30-45 seconds


Shuck beans from their pods and throw out pods


Heat garlic in 2 tsp olive oil


Add all veggies and garlic to food processor


Add Basil and Parsley


Squeeze in a slice of lemon


Add between 1/2-1 cup oil in processor to get a good sauce thickness



Keep warm in on pot on stove and serve over your choice of fish.
