INGREDIENTS

  • 1/2 c water
  • 3 T roce vinegar
  • 1 1/2 T brown sugar
  • 1/2 small red onion, very thinly sliced
  • 10 slices English Muffin Bread
  • Olive oil non-stick spray
  • 1 large granny smith apple
  • 6 oz Gouda
  • Dijon mustard
  • 20 pieces of arugula
  • 10 thin slices of prosciutto, sliced in half length-wise
  • Freshly-ground pepper

DIRECTIONS

Preheat the oven to 400.


Bring water, rice vinegar and brown sugar to a boil; add onions and remove from heat. Cover, and set aside to cool.


Trim crusts off bread and cut in half lengthwise.


Spray baking sheet with olive oil spray, arrange bread on tray and spray tops as well.


Toast in oven until and lightly golden.


Cut apple in half, core and slice into thin half-moons.


Thinly slice the gouda to fit the toast pieces.


Smear dijon mustard on each toast.


Top with a piece of apple, then cheese, then arugula.


Wrap a slice of prosciutto around the middle of each.


Top with a little bit of the onion, a drizzle of olive oil and freshly-ground pepper.


RECIPE BACKSTORY

This was a recipe I saw on the Food Network. We threw a girls' night/paklava tutorial recently, so I wanted to try it for that occasion, but changed it up a little bit. For one thing, I happened to see English Muffin Bread at the supermarket. I never knew there was such a thing, so I wanted to use that. It turned out to be the perfect texture. I also substituted arugula for the watercress, wanting that peppery bite, and substituted rice vinegar for the onions for a lighter taste. They were scarfed down very quickly!
