Guinness Stout Chocolate Cake
1 cup Guinness stout
1 stick butter
3/4 cup cocoa powder
2 cups granulated sugar
3/4 cup sour cream
1 tablespoon vanilla extract
2 cups all purpose flour
2.5 teaspoons baking soda
1 cup heavy whipping cream
4 oz. white baking chocolate
Pre-heat oven to 350 degrees.
Butter a 9 inch springform baking pan (if you want to transfer to another platter later, use parchment paper).
Heat guinness and butter in a saucepan until the butter is melted.
Remove from heat.
Whisk in cocoa and sugar.
In a separate bowl, beat sour cream with vanilla and eggs.
Add to chocolate mixture.
Stir in flour and baking soda.
Pour mix into the springform pan and cook 45 minutes to an hour.
Heat heavy whipping cream in a saucepan, stirring constantly.
Add white chocolate; stir until chocolate is melted.
Put the mixture in the refrigerator or freezer until chilled (not frozen - just goes more quickly in the freezer).
Whip the cream until soft, firm peaks form - if you are doing this by hand, it takes about 10 minutes of fairly intense whipping.
Put frosting on cake when cooled - enjoy!

I just made this for my birthday - originally i think it had a different frosting, but I made it with a white chocolate whipped cream one and it was delicious!
