HAM AND CHEESE STUFFED ARTICHOKE HEARTS
1/4 c. minced onion
1/4 c. finely chopped ham
2 Tbsp. butter
1/4 c. bread crumbs
1/4 c. mayonnaise
3/4 c. grated Swiss cheese
2 (14 oz. each) cans artichoke hearts, drained
1 c. (approximately) chicken broth
Saute onion and ham in butter until onions are soft but not browned.
Add bread crumbs and stir.
Remove from heat.
Add mayonnaise and cheese.
Carefully spread leaves on artichoke hearts to form cups.
Stuff each heart with some of the mixture.
Place in a shallow baking dish.
Drizzle some chicken broth over stuffed artichoke hearts and add broth to about 1/8-inch in bottom of dish.
Bake 20 minutes at 350 degrees.
Run briefly under broiler to brown tops lightly.
Pairs Well With
A classy first course that's a cinch to make and tastes terrific. If desired, some of the center leaves in the artichokes can be removed, making larger cups to hold the stuffing.
