HOMEMADE MATZOS: EGG-ONION, BEET, AND CINNAMON RAISIN

Serves Makes about 20 Matzos | Prep Time | Cook Time

Ingredients

Egg-Onion:
1 onion, sliced and sautéed in ¼ cup olive oil until golden
1¼ cups Better for Bread flour and extra if needed
1 teaspoon sea salt

Beet:
1 small fresh beet, cooked
1¼ cups Better for Bread flour and extra if needed
1 teaspoon salt
1 tablespoon olive oil
**************************************
Cinnamon Raisin:
¼ cup raisins
1½ teaspoons cinnamon
1¼ cups flour
1 egg white
**************************************
Kosher salt


For all the different types of matzohs, place all ingredients in work bowl of food processor. Mix or process until dough forms a ball. Let rest 30 minutes. At this point, the dough may be refrigerated for a few days or frozen for 6 months.


Preheat pizza stone in the oven for 2 hours or until very hot.


Using a pasta machine, roll out dough until it is very thin. Cut out rectangles and make holes in the rectangles with a fork. If desired, season with a little Kosher salt.


Place matzohs on stone and bake 60 seconds. Turn and bake 60 seconds more. Serve and enjoy!
