2 med. zucchini (about 5 oz. each), cut into 1/4" thick slices
2 tbsp. plus 2 tsp. reduced-calorie margarine (tub)
2 tbsp. grated Parmesan cheese
2 tbsp. chopped scallion (green onion)
1/4 tsp. oregano leaves
Dash garlic powder
1 tbsp. seasoned dried bread crumbs
1/4 tsp. paprika
On large microwave-safe serving plate arrange zucchini slices in a single layer; cover with plastic wrap and microwave on high until tender-crisp, 1-2 minutes.
Remove plate from oven and set aside.
In small bowl combine remaining ingredients except bread crumbs and paprika.
Spread an equal amount of mixture over each zucchini slice; sprinkle each slice with an equal amount of bread crumbs, then paprika; microwave on high until hot, 30 seconds to 1 minute.
Let stand for 1 minute before serving.
