1 sheet aluminum foil
4 (4-6 oz) halibut fillets (or other white fish)
1 (13.75 oz) can quartered artichoke hearts, drained
1 (2.25 oz) can sliced black olives, drained
1 medium green pepper, chopped
1 cup bottled thick spaghetti sauce
1 cup shredded Parmesan cheese, divided
Heat oven to 400 degrees. Line a 9×12 pan with foil and coat with nonstick cooking spray. Pat halibut dry with paper towel and place in pan.
combine artichoke hearts, olive, green peppers, spaghetti sauce and 1/2 cup Parmesan cheese; blend throroughly. Top each piece of halibut with 1/4 vegetable mixture. Sprinkle remaining cheese over vegetables.
Bake frozen halibut 20-25 mintues or fresh/thawed fish for 15-20 minutes. Serve with pasta.
