Ham and Bean Soup
1 tablespoon olive oil
1 small onion
2 garlic cloves
1 1/2 cups of ham cut into bite size pieces
2 teaspoons of thyme
2 15 ounce cans of white beans, drained and rinsed
4 cup low sodium chicken brothe
1 bay leaf
4 cups of collard green cut into thin strips or 1 can cooked collard greens
salt and pepper to taste
Cook onion, garlic, ham and thyme in oil in large pot on medium heat until onion is osftened. approx. 5 minutes
Add beans, broth, bay leaf, collards, salt and pepper and simmer, uncovered for 20 minutes. stirr occationally.
Remove bay leaf and serve.
