HAM AND BEAN SOUP
Ham and Bean Soup
Needed a good recipe to use the left over ham from Christmas
INGREDIENTS
- Cooking Time: 20
- Servings: 6-8
- Preparation Time: 15
- 1 tablespoon olive oil
- 1 small onion
- 2 garlic cloves
- 1 1/2 cups of ham cut into bite size pieces
- 2 teaspoons of thyme
- 2 15 ounce cans of white beans, drained and rinsed
- 4 cup low sodium chicken brothe
- 1 bay leaf
- 4 cups of collard green cut into thin strips or 1 can cooked collard greens
- salt and pepper to taste
DIRECTIONS
Cook onion, garlic, ham and thyme in oil in large pot on medium heat until onion is osftened. approx. 5 minutes
Add beans, broth, bay leaf, collards, salt and pepper and simmer, uncovered for 20 minutes. stirr occationally.
Remove bay leaf and serve.
