Ham in Cream Sauce

Serves 6-8 | Prep Time | Cook Time

Ingredients

4 Tbls. plus 2 tsp. butter
4 Tbls. flour
2 Cups milk
1/4 tsp. nutmeg
salt & pepper
1 lb. cooked ham, diced
2 Tbls. chopped chives
6 Tbls. sherry


Melt 4 Tbls. butter in saucepan and add flour, blending well. Add milk, stirring well and cooking over medium heat until thickened. Add nutmeg and salt and pepper to taste. Remove from heat. Cook ham in


2 tsp. butter for about 10 minutes, stirring, and add chives. Cook gently 3 - 4 more minutes. Add sherry and heat through. Combine ham with cream sauce and serve.


Yield 6 - 8 servings

This recipe can be ladled over English muffins or toast for brunch, served with noodles or rice,

or served as a side dish with a cheese souffle.
