Ingredients

2 Tablespoons butter
4 large ham steaks
1 cup strong black coffee

Melt butter in a large heavy skillet and add ham steaks. Fry until browned on both sides, about 10 minutes. Remove ham and set aside. Notes

As the legend goes, Andrew Jackson once asked his whiskey-drinking cook to "bring some ham and gravy as red as your eyes." And that's how the pan gravy from country ham was named. How true that story is I don't know, but what is 100% true about Ham with Red Eye Gravy that it is a breakfast staple in all Southern States. This recipe we found in America a Regional Cookbook by Mary Brandt Kerr.
