This is a soup my mother makes quite a lot. She says it's a depression-era recipe passed down from my great grandmother. It's particularly great if made using home-canned tomato juice!


  • 1 onion, chopped
  • Approx. 3 c. water
  • 1 qt. tomato juice
  • 1 lb. hamburger, thawed
  • 1 package egg noodles
  • Salt (optional)


  • Bring water to a boil in a large pan. Add crumbled hamburger pieces and onion. Boil until hamburger is cooked through. (Scoop any grease off the top of the water using a spoon.) Add tomato juice and egg noodles. Broth should be thin, if it is too thick, add more water. Boil until noodles are cooked.
