Hamburger Minestrone Soup

Serves 6 | Prep Time 15 minutes | Cook Time 90 minutes

Ingredients

1 pound ground beef
1 cup chopped onion
1 can tomatoes, whole or diced - 28 ounces, undrained
1 cup copped cabbage
1 cup cubed potatoes
1 cup sliced raw carrots
3/4 cup sliced celery
1/4 cup chopped green pepper
4 cups beef broth
2 cups water
1/4 cup uncooked rice
2 bay laves
1/2 tsp thyme
1/4 tsp oregano
1/4 tsp basil
4 tsp salt
1/4 tsp pepper


In a large kettle, saute ground beef and onions until meat is browned; drain fat.


Add tomatoes, cabbage, potatoes, carrots, celery, and green pepper. Bring to a boil.


Add broth, water, rice, and seasonings.


Cover and simmer for 1 hour.


Serve sprinkled with grated Parmesan cheese.


Note: I prefer to put the carrots in a mini food processor and chop them pretty finely, so they are little carrot chips.
