Harvest Pumpkin Bread

Ingredients

1/3 CUP BUTTER-SOFTENED
1 CUP SUGAR
2 EGGS
1 CUP PUMPKIN-COOKED AND MASHED
1/3 CUP WATER
1 TSP. VANILLA
1 TSP. CINNAMON
1 TSP. NUTMEG
2 CUPS FLOUR
1 TSP. BAKING SODA
1/4 TSP. BAKING POWDER
3/4 TSP. SALT
1 CUP WALNUTS-CHOPPED


In a large mixing bowl, with an electric mixer, cream together the butter and sugar. Add eggs and combine. Add pumpkin, water, vanilla, cinnamon, and nutmeg. Beat until smooth. In another bowl, combine flour, baking soda, baking powder, and salt. Add the nuts and toss to a coat well. Gradually add the dry mixture to the batter using a wooden spoon. Combine well. Spray two standard size loaf pans with vegetable spray. Divide batter into pans and bake at 325* for 1 hour.
