Hashed Brown Potato Bake
1/2 c. chopped onion
1 can cream of celery soup
1 (3 oz.) pkg. cream cheese
4 c. frozen shredded potatoes
1/3 c. shredded cheddar cheese
Cook onion in a little water 'til tender. Drain. Combine soup and cream cheese in saucepan and heat, stirring, 'til mixture is smooth.
Combine frozen potatoes and onion in 2 qt. casserole. Stir in hot soup mixture.
Cover and bake in 350º oven for 1 hr. 15 min. Remove lid, sprinkle cheddar cheese on potatoes and return to oven long enough to melt the cheese.
