  • 3 c flour
  • 3 c sugar
  • 1 t baking soda
  • 2 c mashed ripe bananas
  • 1 (8 oz) can crushed drained pineapple
  • 1 c chopped nuts
  • 3 eggs beaten
  • 1 1/2 c oil
  • 1 t salt
  • 1 t cinnamon
  • 2 t vanilla


  • Combine dry ingredents; stir in nuts and set aside. Combine remaining ingredents. Add to dry ingredients stirring just until batter is moistened. Spoon batter into 2 greased and floured 9 *5*3 loaf pans. Bake at 350 degree for 1 hour and 5 minutes or until done. Cool 10 minutes before removing from pans. Remove to wire racks; cool completely. Makes 2 loaves.
