Hazelnut Shortbread

Serves About 6 dozen | Prep Time 15 minutes | Cook Time 15 minutes per batch + c

Ingredients

1 cup butter, softened
1/2 cup sugar
2 tbsp maple syrup or honey
2 tsp vanilla
2 cups flour
1 1/4 cups finely chopped hazelnuts
1/2 cup semisweet chocolate chips


In a large mixing bowl, cream the butter and sugar until light and fluffy.


Add the syrup and vanilla


Add the flour


Mix just until combined


Fold in the nuts


Shape into two 1 1/2 inch rolls


Wrap each in plastic wrap


Refrigerate for 2 hours or until firm


Unwrap the dough


Cut into 1/4 inch slices


Place 2 inches apart onto ungreased baking sheets


Bake at 325 F for 14-16 minutes or until the edges begin to brown


Remove to wire racks to cool completely


Melt the chocolate chips


Drizzle over the cookies


Let stand until the chocolate is set
