HAZELNUT AND BRIE FRENCH TOAST SANDWICHES

Ingredients

  • 1/2 wheel of good brie, sliced into 1/8 inch slices
  • 2 Tbls. Nutella spread
  • 1 loaf french bread, sliced into 1/2 inc slices
  • 3 eggs
  • 3/4 cup milk
  • 1 tsp. sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract

Directions

  • Whisk eggs, milk, vanilla, cinnamon and sugar until frothy
  • Heat a saute pan over medium heat and spray with cooking spray
  • Dunk 4 bread slices in egg mixture until coated on each side
  • Cook french toast on one side until lightly browned (about 3-5 minutes) and flip
  • Cook the other side just until egg mixture is dry (about 1 minute)
  • Remove bread from pan, spread browned sides evenly with Nutella, layer with brie
  • Sandwich bread slices so that browned sides are inside and the undercooked sides are on the outside and return to pan.
  • Cook covered, on low heat until just browned, flip and repeat
  • Slice in half and serve hot
