Healthier Fried Chicken

Ingredients

2 cups buttermilk
2 tbsp Dijon mustard
2 tsp salt
2 tsp garlic powder
1 tsp black pepper
1 tsp hot red pepper sauce
8 split chicken breasts (10-12 oz each, skin removed)
3 cups crushed corn flakes
1 fresh bread crumbs
1 tsp ground poultry seasoning
1 tsp paprika
1 tsp cayenne
2 tbsp vegetable oil


Whisk buttermilk, mustard, salt, garlic powder, black pepper, and hot sauce in bowl. Add chicken and coat well.


Chill for 1-12 hours.


Get out cookie cooling rack and line foil under rack.


Heat oven to 400 degrees.


Gently toss corn flakes.


Bread crumbs, poultry seasoning, paprika, cayenne in bowl.


Drizzle oil over crumbs and toss until well coated.


Place chicken on rack and place in oven.


Bake until golden brown (35-45 minutes).
