Healthy Grilled Potatoes
6 or 7 Yukon Gold Potatoes (quartered)
1 small yellow or white onion (chopped)
2 TBSP Butter
3 Cloves Garlic
1/2 Cup Parmesan Cheese
Evenly spread out ingredients (except for cheese) in an aluminum foil boat (works better if you use two layers of aluminum foil) and be sure to close all seems so steam will be trapped inside.
Place on the grill, medium heat for 35 minutes.
Take off heat, open and sprinkle cheese over the top.
Cover again and heat an additional 5 minutes. They're tasty.
