HEALTHY PUMPKIN/BANANA BREAD
Healthy Pumpkin/Banana Bread

INGREDIENTS
- 1 c. whole wheat flour
- 1/2 c. cornmeal
- 1 c. dark brown sugar
- 1 1/2 t. baking powder
- 1 t. baking soda
- 1 t. cinnamon
- 1/2 t. allspice (I substitute cloves or nutmeg here sometimes)
- 1/2 t. salt
- 8 oz. canned pumpkin (1 scant cup; not pumpkin pie mix) or substitute 2 – 3 ripe mashed bananas
- 1/2 c. plain lowfat yogurt
- 2 1/2 T. vegetable oil
- 1 egg
- 1 egg white
- Chopped nuts (optional)
DIRECTIONS
Heat oven to 350. Spray a 9X5 pan with cooking spray and coat lightly with flour. Combine all dry ingredients. Add remaining ingredients and mix just until combined. Don’t overmix. Pour into prepared pan and bake for 55 – 60 mins.
