Heart Healthy Lemon Cheesecake
2 tablespoons light margarine spread
1 cup rolled oats, uncooked
1/3 cup brown sugar
1/4 cup graham cracker crumbs
20 ounces fat-free cottage cheese
1 pkg. (8 oz.) cream cheese
6 egg whites
2 tablespoons lemon juice
8 ounces fat-free sour cream
1 teaspoon sugar
2 teaspoons lemon juice
Combine all crust ingredients and pack into 9-inch springform pan. Bake in 350ºF oven for 18 minutes.
Combine all filling ingredients and mix until smooth. Pour into pan with crust and bake 40 minutes in 325ºF oven.
Mix all topping ingredients. Pour over cheesecake after it comes from the oven but still in springform pan before cheesecake has cooled.
Chill 3-4 hours in fridge before removing from pan.
