HEARTY MUFFINS

Ingredients

  • 1 Cup carrots, shredded
  • 1 Cup (or 2 whole) bananas, mashed
  • 1 Cup zucchini, shredded
  • 1/4 Cup vegetable oil
  • 1/4 Cup yogurt
  • 2 eggs
  • 1 Cup whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/2 Cup brown sugar
  • 1/2 Cup oats
  • 1/2 Cup shredded coconut
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger

Directions

  • 1. Preheat oven to 375F (190C). 25F less in using dark pans
  • 2. Grease or line 12 muffin cups
  • 3. Mix carrots, banana, zucchini, oil, yogurt, and eggs together in a medium bowl
  • 4. Stir flour and baking soda together in a large bowl. Add the brown sugar, oats, coconut, cinnamon, salt, and ginger to the flour mixture
  • 5. Stir wet ingredients into flour mixture until all ingredients look moist
  • 6. Fill muffin cups with batter until 3/4 full
  • 7. Bake for 15-25 minutes until browned and a toothpick inserted in center of muffin comes out clean
  • 8. Let cool for 10 minutes then remove from pan
