Why I Love This Recipe


Ingredients You'll Need

3 bacon slices, chopped
1 pound smoked sausage, sliced
2 medium onions, chopped
1 medium green bell pepper, chopped
2 cloves garlic, minced
10 c. water
3 c. chopped cabbage
2 medium carrots, thinly sliced
1 (16-oz) can whole tomatoes, cut up (undrained)
1 (6-oz) can tomato paste
3 T beef-flavored instant boullion
1 t. seasoned salt
1/2 t. thyme leaves
Dash cayenne pepper
2 small zucchini, chopped
1 (15-oz) can kidney beans
1/2 of a (1-pound) package Goulash Egg Noodles, uncooked
Grated Parmesan cheese


Directions

In large stockpot, cook bacon until crisp. Drain, reserving 2 T. fat. Add next four ingredients (through garlic); cook until onion is tender. Add next nine ingredients (through cayenne pepper); mix well. Bring to a boil. Reduce heat; simmer, covered, 45 minutes. Stir in zucchini and kidney beans. Cook 10 minutes longer. Stir noodles into soup and cook an additional 10 minutes. Serve with Parmesan cheese.
