HEARTY SAUSAGE SOUP

Ingredients

  • 3 bacon slices, chopped
  • 1 pound smoked sausage, sliced
  • 2 medium onions, chopped
  • 1 medium green bell pepper, chopped
  • 2 cloves garlic, minced
  • 10 c. water
  • 3 c. chopped cabbage
  • 2 medium carrots, thinly sliced
  • 1 (16-oz) can whole tomatoes, cut up (undrained)
  • 1 (6-oz) can tomato paste
  • 3 T beef-flavored instant boullion
  • 1 t. seasoned salt
  • 1/2 t. thyme leaves
  • Dash cayenne pepper
  • 2 small zucchini, chopped
  • 1 (15-oz) can kidney beans
  • 1/2 of a (1-pound) package Goulash Egg Noodles, uncooked
  • Grated Parmesan cheese

Directions

  • In large stockpot, cook bacon until crisp. Drain, reserving 2 T. fat. Add next four ingredients (through garlic); cook until onion is tender. Add next nine ingredients (through cayenne pepper); mix well. Bring to a boil. Reduce heat; simmer, covered, 45 minutes. Stir in zucchini and kidney beans. Cook 10 minutes longer. Stir noodles into soup and cook an additional 10 minutes. Serve with Parmesan cheese.
