Herb and Olive Bread
2 Cups cool water
2 Tablespoon extra-virgin olive oil, plus extra for brushing
1 1/2 Teaspoon salt
4 Cups unbleached flour, as needed
1-1/4 Ounce envelope instant yeast
1 Cup pitted and coarsely chopped Kalamata olives
4 Tablespoon finely chopped herbs, such as marjoram, parsley, garlic, rosemary, or thyme
Add water, oil and salt to a mixing bowl. Stir in yeast and 3 cups of flour and mix. Add in enough of the remaining flour to form stiff dough. On a floured surface, knead 10 minutes. Form dough into a rectangle and spread olives and herbs on it. Form into a loaf, knead to spread olives evenly and reform in prepared bread pan. Let rise 1 1/2 hours. Preheat oven to 425 degrees F. Score length wise 1/2 in deep and oil top with olive oil and sprinkle with herbs. Bake for 25 minutes.

Now, I like olives, my wife does not. I enjoy the taste of this artisan bread with just a smear of butter.
