Why I Love This Recipe

Step 1 :In small bowl mix together the butter, oregano, thyme, rosemary, lemon zest and garlic. Gently lift the skin of the rooster breast and rub the inside of the breast with the herbed butter.

Step 2 :In oven proof skillet on high heat, place rooster breast skin side down and cook until golden brown and skin is crispy, taking care to baste with juices.

Step 3 :Turn breast over when skin is crispy and place skillet in pre-heated 400 degree oven for approximately 25 minutes to finish cooking.

Step 4 :In pot of salted boiling water add the broccoli and cook until done. Remove and chop to small pieces.

Step 5 :In large bowl add diced onions, mustard, olive oil, salt and pepper. Add chopped broccoli and juice of ½ a lemon and mix well.

Step 6 :Place broccoli mash on serving plate and top with sliced rooster breast

Step 7 :For garnish top with a few oregano leaves and a drizzle of olive oil.

1 Rooster Breast with skin on
1/2 stick butter, softened
Fresh Oregano, Thyme and Rosemary, finely chopped
Zest of 1 lemon
1 garlic clove, minced
Salt and Pepper
1/2 pound broccoli crowns
Olive Oil
1 Tablespoon Mustard
1 Red Onion, Finely Diced
5 Basil Leaves
