HERBED ZUCCHINI

Ingredients

  • 5 bacon strips diced
  • 1 c. celery
  • 1 c. onion
  • 1 garlic clove
  • 1 c. diced tomatoes
  • 4 to 5 c. sliced zucchini
  • 1 T. fresh parsley
  • 1 1/2 tsp. fresh sage
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 2 T. parmesan cheese
  • 1/3 c. shredded mozzarella cheese

Directions

  • 5 bacon strips diced
  • 1 c. celery
  • 1 c. onion
  • 1 garlic clove
  • 1 c. diced tomatoes
  • 4 to 5 c. sliced zucchini
  • 1 T. fresh parsley
  • 1 1/2 tsp. fresh sage
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 2 T. parmesan cheese
  • 1/3 c. shredder mozzarella cheese
  • Cook bacon until crisp. Remove bacon. In 1 T. bacon fat saute onion, celery & garlic until tender. Add rest of vegetables and seasonings. Bring to boil reduce heat; cover and simmer 6-8 min. till zucchini is tender. Sprinkle with cheeses & bacon. Melt & serve.
