Hidden Valley Appetizer Cheesecake

Ingredients

2 pkgs. (8 oz each) cream cheese, softened
2 cups shredded Mexican cheese
1 cup sour cream
3 eggs
1 pkg. (10 oz) tomatoes, diced and drained
1 pkg. Hidden Valley Ranch seasoning
1/2 cup sour cream
1/4 cup fresh cilantro, chopped
1 cherry tomato or other garnish


Beat cheeses with electric mixture until mixture is fluffy. Beat in one cup sour cream. Add eggs all at once. Beat on low speed until combined. Add Hidden Valley Ranch Seasoning mix. Stir in tomatoes. Pour in greased 8 inch springform pan. Place on baking sheet. Bake in 350 degree oven for 40 to 45 minutes or until center is almost set. Cool in pan. Chill in pan 3 to 24 hours. Remove sides from pan to serve. Spread 1/2 cup sour cream on top and garnish with cilantro, cherry tomato, or garnish of choice.
