Cookie Exchange Entry using M&M's as the bell

Ingredients You'll Need

1 3/4 cup all purpose flour
3/4 cup butter
1/4 teaspoon salt
2/3 cup white sugar
1 egg
1/4 tsp. coconut extract
Red & Green colored sugar
Red and Green M&M's


Directions

In a large bowl, beat butter and salt on medium speed for 30 seconds. Add sugar and beat until fluffy. Add egg and coconut flavoring, beat well.


Add flour and beat until well mixed. Cover and chill about 30 minutes or until easy to handle.


Divide dough in half. Shape into two 6-inch rolls. Roll each half in colored sugar. Wrap tightly and freeze until dough is firm (about 4-6 hours).


To bake, let rolls stand 5 minutes. Cut into 1/4" slices. Let stand 10 minutes to soften.


Place on a ungreased cookie sheet. Place an M&M candy on the bottom half of each slice for bell clapper. Fold in sides, overlapping at top and slightly covering candy.


Bake 350 degrees for 10-12 minutes or until edges are very lightly browned.


Remove and cool on a wire rack.
