Holiday Merigue Cookies
2 Egg Whites
1/8 t. Salt
1/8 t. Cream of Tartar
3/4 c. Sugar
1/2 t. Vanilla
1 c. Mini Semi-Sweet Chocolate chips
1 c. Pecans, chopped
4 T. Crushed Candy Canes
Beat egg whites until foamy, add salt and cream of tartar. Beat until soft peaks form.
Add sugar 1 tablespoon at a time, beating well after each addition.
Meringue should be stiff and shiny.
Fold in vanilla , chips and nuts.
Drop by teaspoon on lightly greased cookie sheet (I use parchment paper), leaving 1 1/2 inches between cookies.
Sprinkle with crushed peppermint candy.
Bake at 250° for 40 minutes.
Store airtight. Makes 5 dozen.
Note: Best if not made on humid days.
