Honey Apricot Pork Chops

Ingredients You'll Need
4 thick-cut pork chops
Oil to brush on chops
2 tablespoons butter
1 onion, chopped
2 mild green chilies, chopped
2 garlic cloves, minced
1 cup apricot nectar
1 cup dried apricots
10 teaspoons honey
4 teaspoons lemon juice
4 tablespoons pecans, chopped
3 cups hot cooked rice
Directions
1. Heat a skillet over medium heat. Brush pork chops with a little oil and brown on each side. Remove
chops from skillet.
2. Melt butter in the skillet; add onion, green chilies, and garlic, and cook until almost tender. Stir in
remaining ingredients and return chops to skillet. Cover tightly and cook on low for 5 to 6 minutes or
until chops are done.
3. Serve with hot cooked rice.
