- 6 c. red currants, coarsely chopped
- 1/4 cup sugar
- 1/4 c. balsamic vinegar
- 5 Tbsp. honey
- 5 c. white wine vinegar
- Combine currants and sugar in 2 quart jars. Let sit 1 day, stirring often. Strain into noncorrosive saucepan extracting as much juice from currants as possible. Add honey and vinegars. Bring to boil. Simmer 3 min.
- Cool completely. Pour into sterilized jars. Cover or cork. Store
- in cool place.
