Honey Currant Vinegar
6 c. red currants, coarsely chopped
1/4 cup sugar
1/4 c. balsamic vinegar
5 Tbsp. honey
5 c. white wine vinegar
Combine currants and sugar in 2 quart jars. Let sit 1 day, stirring often. Strain into noncorrosive saucepan extracting as much juice from currants as possible. Add honey and vinegars. Bring to boil. Simmer 3 min.
Cool completely. Pour into sterilized jars. Cover or cork. Store
in cool place.
