Honey Dijon Pork Tenderloin

Ingredients

1 t olive oil
1/2 c balsamic vinegar
1Tminced fresh rosemary
3T honey
1T dijon mustard
1/2t salt
1/4 t pepper
4 pork Tenderloins(3/4 lbs each)
Note: can be fewer tenderloins


Trim the fat off of the tenderloins. Mix all of the other ingredients together and marinade the tenderloins in the mixture for at least 3 hours(overnight is better.) Cook in the oven in the marinade at 400 degrees for 25-30 min. the meat thermometer should read 160 degrees.( it takes longer for my oven) Remove the tenderloins from the marinade and let them sit for about 10 min. Serve the marinade separately to spoon over the pork.
