Honey Lemon Chia Seed Muffins
1¾ cups all-purpose flour
¾ cup granulated sugar
2½ tsp. baking powder
¼ tsp. salt
¾ cup part-skim ricotta cheese (see note below)
½ cup water
¼ cup olive oil
Zest of 2 lemons
2 tbsp. fresh lemon juice
2 tbsp. chia seeds
2 tbsp. honey, melted
Preheat oven to 375 degrees Fahrenheit.
Prepare a cupcake sheet to be used.
Mix flower, sugar, baking powder and salt together in one bowl. While in another bowl mix the ricotta, water, olive oil, lemon zest, lemon juice and egg.
Then mix these two bowls together.
Once they are mixed well, add the chia seeds and stir.
Then put in containers to be baked.
Bake for around 16 minutes or until you think they are done.
While they are still warm lightly pour honey on top of the muffins.
Let cool and eat.

Honey can be purchased locally while the others must be purchased form sources on the global level. This is a great muffin to have to start your day in the fall. As the days get longer it will give you a nice refreshing meal to start the day.
