Honey Walnut Dressing
1/4 cup olive oil
1/2 cup walnut pieces
1/4 cup white wine vinegar
1 1/2 Tablespoons honey
Salt & freshly ground black pepper
Heat the oil in a large frying pan over medium heat. Add the walnuts and cook, stirring, for 1-2 minutes or until lightly toasted. Transfer the oil and walnuts to a heatproof jug and set aside for 10 minutes to cool. Add the vinegar and honey, and whisk with a fork until well combined. Taste and season with salt and pepper.
