tightly pack in a small glass jar,
cover with honey and leave for 2 months.

A few of you will remember the year I gave jars of honeyed garlic as Christmas gifts. It took me over 3 hours to peel 5 lbs. of garlic. While it is easier to buy pre-peeled garlic, you may be able to taste the difference.
