Horseradish Bean Dip
2 cups cooked cannellini beans
2 tablespoons olive oil
1 tablespoon prepared horseradish
1/2 cup sour cream
2 scallions, trimmed and minced
Coarse sea salt to taste
Fresh ground pepper to taste
Combine beans, olive oil, horseradish, sour cream, and scallions in a blender or food processor.
Blend until smooth. Season with salt and pepper to taste.
