Hot Air (Sponge) Candy
1 cup sugar
1 cup dark corn syrup
1 tbsp. vinegar
1 tbsp. baking soda
Combine sugar, syrup and vinegar in a large heavy saucepan.
Cook over medium heat until mixture reaches 290 - 310 degrees on a candy thermometer.
Remove pan from heat and add baking soda, stirring quickly to mix.
Pour candy into a buttered 9 x 9 x 2” buttered pan.
Let candy spread itself.
When cool break into pieces.
Coat with dipping chocolate if you wish.
