Hot Artichoke Canapes
1 loaf french bread
1 cups fresh spinach
3 cups quartered artichokes- cleaned and dried
6 large green olives
2 tbsp lemon juice
1 tbsp olive oil
1/4 cup onion chopped
1/8 tsp oregano
1/8 tsp red pepper sauce
1 tbsp parsley
1/2 cup mayo (optional)
1 tbsp garlic minced
1 can diced green chiles (4 oz)
1/2 cup pancetta, cooked crisp, diced
1.5 cup shredded cheese (Parmesan, Romano, Pecorino)
salt and pepper
Toss the artichokes in lemon juice, olive oil, salt and pepper.
Roast artichokes on a covered sheet pan for 20-25 minutes at 375 degrees.
Cool and puree with all other ingredients but use only 1 cup of cheese in the bowl of a food processor.
Serve on french bread toasts, top with remaining cheese, and broil under brown/bubbly.
Serve them hot on cooling rack so they don't get soggy.
