HOT BUTTERED RUM CHEESECAKE

Ingredients

  • 1 c. crushed shortbread cookies
  • 3 Tbl brown sugar
  • 5 pkg cream cheese
  • 1/3 c. heavy whipping cream
  • 1 Tbl rum extract
  • 1/8 tsp ground cloves
  • 3 eggs
  • 2 Tbl unsalted butter
  • 1 1/4 sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg

Directions

  • Preheat over to 325 deg.
  • Mix cookies, brown sugar and butter. Press firmly into spring form pan. Beat cream cheese, sugar, cream, rum, cinnamon, nutmeg and cloves in a large bowl on medium speed. Poor over crust. Bake 1 hour 15 min to 1 hour 25 min. Turn off oven. Leave in oven 30 min. remove from oven to cooling rack for 30 min. Run spatual along sides of pan. Refridgerate 3 hours uncovered, then refridgerate covered over night.
