How to prepare fiddleheads

Gently wash trimmed fiddleheads in several changes of cold water. Drain. Blanch the fiddleheads in a rapidly boiling pot of salted water for one minute, then cool immediately. When ready to serve, heat quickly and gently in skillet/pan with melted butter. Season to taste with salt and pepper.
