- 2/3 cup cornmeal
- 1/3 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp salt
- 1/2 small onion, minced
- 1/3 cup fat free milk
- 1 large egg, beaten
- 1 Tbsp. canola oil
- 1/8 tsp pepper
- Combine first 4 ingredients in a medium bowl. Add remaining ingredients, stirring just until blended.
- Spoon batter evenly into lightly greased muffin cups in miniature muffin pans, filling three-fourths full.
- Bake at 450 degrees for 10 minutes or until muffins are golden brown.
