Why I Love This Recipe

My hubby brought home these limes to add to some drinks and I had a few left over. It is commonly taken on train trips in India along with some eggplant curry. We also serve it at temple functions with other foods. It is called lime rice, but you can also use lemons. Another variation is peanut rice, where you can add this peanut flavor to the rice.


Ingredients You'll Need

1 fresh lime
1 cup cooked white or brown rice
1 tsp cumin and mustard seeds
1 tsp white gram or lentils
1/2 tsp turmeric
3 dried red chillies
1/4 tsp cayenne
1/4 tsp coriander powder
1/4 tsp cumin powder
Garlic salt
1 tbsp olive oil


Directions

STEP 1


Heat olive oil in a frying pan and add your cumin and mustard seeds as well as the red chilies. When you hear the popping sound, add your cooked rice!


STEP 2


To the rice, squeeze lime juice over it and mix well.


STEP 3


Add the rest of the spices and turmeric to give it a yellow color!


STEP 4


Cook for a few minutes and serve hot!! Enjoy!!
