Why I Love This Recipe
This recipe is a result of an experiment done to use up my small leftovers in the fridge. Moreover, it came out super delicious with very healthy ingredients. I have used palak/ spinach in which is rich source of Vitamin A and minerals. Further adding paneer/ cottage cheese to it made it rich in proteins as well. So it’s worth a try :)
Ingredients You'll Need
For dough
Wheat flour – 2 cups
Cumin seeds/jeera- 1/2 tsp
Spinach / palak – 15 leaves
Salt – 1/2 tsp
For Stuffing
Oil – 2 tsp
1 Onion – finely chopped
2 Potatoes – boiled and finely mashed
Paneer/ Cottage cheese – 50 gms, crushed
Garlic – 2 cloves crushed or finely chopped
Green chilli – 1 finely chopped
Fennel seeds/ Saunf – 1 tsp roughly crushed
Asafoetida/Heeng – 1/4 tsp
Salt- as per taste
Turmeric powder – a pinch
Coriander powder – 1 tsp
Red chilli powder – 1/4 tsp
Garam Masala – 1/4 tsp
Chaat masala – 1/2 tsp
Coriander leaves – finely chopped
Directions
Step 1: Boil water a sauce pan, and put spinach into it after putting off the flame. Add 1/2 tsp of salt on the spinach leaves and give a stir. Let it rest for 5 mins and then strain it.
Step 2: Make a spinach puree by blending blanched spinach in a mixer.
Step 3: Now take flour in a bowl, add salt, cumin seeds, and pour the spinach puree to it. Knead it to a hard dough, using around 1/2 cup of water. Keep it aside.
Step 4: For stuffing, heat oil in a pan. Add crushed saunf, heeng, onions, green chillies, turmeric powder and salt and saute for 3-4 mins.Add garlic and mix. Add mashed potatoes and add all the spices. Let the mixture cook for another 5 mins and switch off the flame.
Step 5: At last, add paneer and coriander leaves and mix.
Step 6: Make parathe using spinach dough and filling generous stuffing in a tawa. You can use oil/ghee to make this paratha.
Step 7: Serve it with curd, pickle and green chilli to enhance its flavor:)
